Did I jump into this project too fast

Last month I agreed to help a friend plan his startup app and now I feel way out of my depth. We are trying to choose an App development Company but every option sounds the same to me. I even asked around here in the UAE during a short visit and got mixed advice. How do you judge reliability before signing anything. Would love to hear what signs people look for first.
